New potato salad

Ingredients:

  • 910g tiny new potatoes
  • 1 cup low-fat mayonnaise dressing or light salad dressing
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • ⅓ cup chopped sweet or dill pickles
  • ½ teaspoon salt
  • ¼ teaspoon coarsely ground black pepper
  • 2 hard-cooked eggs, chopped
  • 1 to 2 tablespoons fat-free milk
  • 1 Coarsely ground black pepper

Instructions:

  1. Place potatoes in a big saucepan and add sufficient water to cover them. Bring it to a boil, then lower the heat. Put the lid on and let it simmer for 15 to 20 minutes until the potatoes are soft. Drain the water well and let the potatoes cool down. Cut them into quarters.
  2. In a large mixing bowl, mix together mayonnaise, celery, onions, pickles, salt, and a pinch of pepper. Gently add the potatoes and egg, mixing them carefully until coated. Cover the bowl and refrigerate for 6 to 24 hours.
  3. When ready to serve, mix in some milk into the salad until it reaches the desired thickness. Season with more pepper to taste.
