Nam tok - thai waterfall grilled beef salad

Ingredients:
- 450g flank steak, cut into 1 inch slices
- 2 tablespoons fish sauce
- 1 teaspoon cracked black pepper
- 1 lime, juiced
- 1/2 cup shallots, thinly sliced
- 1 teaspoon ground chili pepper
- 1/4 cup green onion, thinly sliced
- 1/2 cup fresh mint leaves
- 2 tablespoons Thai toasted rice
- 1/4 cup roasted peanuts, optional
- 1 Thai chili, thinly sliced, optional
- 4 lettuce leaves, optional
- 5 slices of cucumber, optional

- Thai sticky rice, optional
Instructions:
- Mix together the fish sauce, lime juice, and black pepper in a large resealable plastic bag. Add the sliced flank steak to the bag, seal it, and shake well to ensure the beef is evenly coated. Refrigerate for a minimum of four hours, ideally overnight.
- Preheat your gas or charcoal grill to high heat. While waiting, take the marinated beef out of the fridge to bring it to room temperature. Once the grill is ready, place the beef on the grill and cook for a few minutes on each side until done. The cooking process is quite fast. After grilling, transfer the beef to a mixing bowl.
