My italian tuna salad

Ingredients:
- 1 can Tonno (Italian Tuna packed in olive oil)
- 1 tablespoon mayonnaise, good quality please
- 1 tablespoon reserved oil from can
- 1 teaspoon red wine vinegar
- 2 tablespoons minced red onion
- 2 teaspoons minced fresh garlic, no jar here
- 1/4 roasted red pepper, minced
- 1 tablespoon minced parsley
- Lots of freshly ground pepper
- salt to taste, and please taste it first
Instructions:
- Remove the lid of the can and drain the content into a bowl, keeping the oil aside.
- Break the tuna into chunks of around 1/2 inch in a small bowl, avoid mashing it to keep the chunks intact.
- Combine the tuna with the rest of the ingredients, adjust the salt according to your taste, and scoop the mixture generously onto a high-quality Portuguese roll or slices of semolina bread.
