My italian tuna salad

Ingredients:

  • 1 can Tonno (Italian Tuna packed in olive oil)
  • 1 tablespoon mayonnaise, good quality please
  • 1 tablespoon reserved oil from can
  • 1 teaspoon red wine vinegar
  • 2 tablespoons minced red onion
  • 2 teaspoons minced fresh garlic, no jar here
  • 1/4 roasted red pepper, minced
  • 1 tablespoon minced parsley
  • Lots of freshly ground pepper
  • salt to taste, and please taste it first

Instructions:

  1. Remove the lid of the can and drain the content into a bowl, keeping the oil aside.
  2. Break the tuna into chunks of around 1/2 inch in a small bowl, avoid mashing it to keep the chunks intact.
  3. Combine the tuna with the rest of the ingredients, adjust the salt according to your taste, and scoop the mixture generously onto a high-quality Portuguese roll or slices of semolina bread.
  4. Savor the dish.
