My herb garden salad with golden cherry tomatoes

Indulge in the freshness of a garden-inspired salad bursting with vibrant herbs, sweet golden cherry tomatoes, and a zesty dressing. Perfect for a light and flavorful meal.

Ingredients:

  • 3 cups cherry tomatoes
  • 1 cup Italian parsley leaves, minced
  • 1/2 cup oregano leaves, minced
  • 1 cup basil leaves, minced
  • 1 cup mint leaves, minced
  • 3 cloves garlic, peeled, smashed and minced
  • 3/4 cup olive oil
  • 2 tablespoons red wine vinegar or sherry vinegar (I make my own vinegar which is very balanced and mild)
  • 1 teaspoon dried red pepper flakes
  • salt to taste
  • fresh ground black pepper

Instructions:

  1. Once the parsley, oregano, mint, and basil are finely chopped, combine them with the oil, vinegar, and red pepper flakes.
  2. Place the cherry tomatoes in a sturdy large zip lock bag and crush them using the flat side of a meat tenderizer. Alternatively, you can break them apart with your hands (similar to popping bubble wrap).
  3. Transfer the crushed tomatoes along with their juices into the herb mixture and mix everything together using a fork. Season with salt and pepper to your liking.
