My favorite salad - aka superfood salad

Ingredients:

  • 140g mache, washed
  • 1/2 cup Marcona almonds
  • 90g soft goat cheese, crumbled
  • 2 tablespoons champagne vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced
  • 1 egg yolk
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions:

  1. To make the vinaigrette, mix together the vinegar, dijon mustard, minced garlic, egg yolk, oil, salt, and pepper in a closed container and shake well.
  2. Toss the lamb's lettuce with just enough vinaigrette to coat the leaves lightly - around 3 tablespoons should suffice. Adjust according to the size of the leaves. Arrange the lamb's lettuce on the serving plate and sprinkle with marcona almonds and crumbled goat cheese.
