My favorite salad - aka superfood salad

Ingredients:
- 140g mache, washed
- 1/2 cup Marcona almonds
- 90g soft goat cheese, crumbled
- 2 tablespoons champagne vinegar
- 1 teaspoon dijon mustard
- 1 clove garlic, minced
- 1 egg yolk
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions:
- To make the vinaigrette, mix together the vinegar, dijon mustard, minced garlic, egg yolk, oil, salt, and pepper in a closed container and shake well.
- Toss the lamb's lettuce with just enough vinaigrette to coat the leaves lightly - around 3 tablespoons should suffice. Adjust according to the size of the leaves. Arrange the lamb's lettuce on the serving plate and sprinkle with marcona almonds and crumbled goat cheese.
