Mustard green, radish and duck salad
Delight your taste buds with this refreshing mustard green, radish, and duck salad. A perfect combination of flavors and textures in every bite.
Ingredients:
- Mustard greens, arugula, duck bacon, radishes, walnuts, maple syrup, eggs
- 5 strips Duck bacon, uncured and smoked (D'Artagnan is good)
- 3 cups Mustard greens
- 3 cups Arugula
- 1/3 cup Radishes, sliced
- 1/2 cup Walnuts
- 1 tablespoon Maple syrup
- Salt and Cayenne pepper to taste
- 4 Eggs, soft boiled
- Walnut oil, white wine vinegar, rice vinegar, maple syrup
- 1/2 cup Walnut oil
- 1/8 cup White wine vinegar
- 1 tablespoon Rice vinegar
- 1 tablespoon Maple syrup
- Salt and pepper to taste
Instructions:
- Mustard greens, arugula, duck bacon, radishes, walnuts, maple syrup, eggs
- Preheat the oven to 200 °C. Start by preparing the duck bacon. Lay the duck strips on a baking sheet and bake in the oven for around 15 minutes until they are cooked through and begin to turn crispy. Once done, take them out, let them cool, and chop them coarsely. Lower the oven temperature to 180 °C. Create the maple-coated walnuts by mixing the walnuts with maple syrup, salt, and cayenne pepper. Spread them on a parchment-lined baking sheet and bake for 10-15 minutes until the walnuts are lightly browned. Allow them to cool. In a large bowl, mix the mustard greens and arugula with the desired amount of the dressing (refer to the vinaigrette recipe below). Sprinkle radishes, candied walnuts, and duck bacon on top. Peel the boiled eggs, slice them in half, and add them to the salad just before serving. Season with salt and pepper to your preference.
