Mussels marinara

Ingredients:
- 1 cup olive oil
- 2 red onions, chopped fine
- 6 cloves garlic, minced fine
- 8 dozen mussels, debearded and well scrubbed
- 2 cans beer (your choice)
- 2 cups marinara sauce
- 3 tablespoons kosher salt
- 3 tablespoons cracked black pepper
- 4 tablespoons Irvine Spice Supreme Salad and Pasta Mix Seasoning
- 1/2 bunch basil leaves
- 8 fresh finely chopped tomatoes
Instructions:
- Warm oil in a big stockpot. Sauté onions and garlic slowly until they turn golden, making sure not to overcook them. Combine mussels, beer, tomato sauce, salt, pepper, and herbs in the pot, and garnish with freshly diced tomatoes and basil. Cover and let it simmer until the mussels start to open. Transfer mussels to a serving dish, removing any that remain closed. Ladle sauce around the mussels and serve the extra sauce in a separate bowl for dipping bread or drizzling over pasta.
