Mung bean, scallion and pomegranate salad

Ingredients:
- 1 cup dried mung beans
- 1/2 cup thinly sliced scallions
- 1/2 teaspoon crushed garlic
- 1/3 cup chopped parsley
- 3/4 teaspoon Near East or Aleppo pepper
- 1 scant teaspoon salt
- 1/4 cup fresh lemon juice
- 1/4 cup fresh pomegranate seeds
Instructions:
- Rinse the mung beans with running water until the water is no longer cloudy. Submerge in cold water for 1 hour, then remove the water.
- In a sturdy pot, simmer the mung beans in 3 1/2 cups of water until they are soft, which should take around 30 minutes. Strain the beans and keep 1/2 cup of the cooking liquid. Let the mung beans cool down a bit before mixing in the rest of the ingredients. Allow it to sit for a few hours to blend the flavors, then adjust the seasonings before serving at room temperature.
