Mung bean, scallion and pomegranate salad

Ingredients:

  • 1 cup dried mung beans
  • 1/2 cup thinly sliced scallions
  • 1/2 teaspoon crushed garlic
  • 1/3 cup chopped parsley
  • 3/4 teaspoon Near East or Aleppo pepper
  • 1 scant teaspoon salt
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh pomegranate seeds

Instructions:

  1. Rinse the mung beans with running water until the water is no longer cloudy. Submerge in cold water for 1 hour, then remove the water.
  2. In a sturdy pot, simmer the mung beans in 3 1/2 cups of water until they are soft, which should take around 30 minutes. Strain the beans and keep 1/2 cup of the cooking liquid. Let the mung beans cool down a bit before mixing in the rest of the ingredients. Allow it to sit for a few hours to blend the flavors, then adjust the seasonings before serving at room temperature.
