Muffaletta-style grilled cheese sandwiches

Ingredients:
- 1 tbsp honey dijon mustard
- 2 tsp lemon zest
- 2 tbsp fresh lemon juice, divided
- 1/4 tsp kosher salt
- 3 tbsp olive oil
- 1/2 cup drained Italian olive salad
- 2 tbsp unsalted butter, at room temperature
- 8 slices Italian bread
- 8 slices provolone cheese
- 8 slices capicola or deli ham (6 oz.)
- 6 cups chopped Romaine lettuce
Instructions:
- Combine mustard, lemon peel, salt, and 1 tablespoon of lemon juice in a large bowl; gradually add oil while whisking until the mixture is well combined.
- Mix together olive blend and the remaining 1 tablespoon of lemon juice in a small bowl. Spread butter on one side of each slice of bread. Lay the bread slices on a flat surface with the buttered side facing down. Place 2 provolone slices, 2 hot capicola slices, and the olive blend mixture on top of 4 slices of bread. Cover with the remaining 4 bread slices, with the buttered side facing up.
- Heat a nonstick skillet over medium heat. Place 2 sandwiches in the skillet. Cook until the cheese is melted and the bread is golden brown, around 3 to 4 minutes per side. Repeat with the remaining 2 sandwiches.
- Mix lettuce with the dressing until it is evenly coated. Serve alongside the sandwiches.
