Mozzarella and roasted cherry tomato salad

Ingredients:
- 2 cups small yellow cherry tomatoes, rinsed
- 2 cups small red grape or cherry tomatoes, rinsed
- 4 garlic cloves, lightly crushed
- 1/2 cup olive oil
- Coarse, flaky salt
- 450g fresh mozzarella
- Freshly ground black pepper
- Handful small basil leaves (or torn basil leaves)
Instructions:
- Preheat the oven to 200 °C. Place the tomatoes on a baking sheet large enough to fit them in one layer. Add the garlic cloves. Drizzle with olive oil and season with salt.
- Bake the tomatoes until they start to shrink and turn golden brown, and their juices mix with the oil, around 25 minutes. Take out from the oven and let it cool down completely.
- Slice the mozzarella into thin 1/8-inch pieces and layer them, slightly overlapping, on a serving plate. Pour the tomatoes, along with their juices and oil, over the mozzarella. Season with salt and pepper. Scatter basil leaves on top. Admire the beautiful dish you've just prepared.
