Mortadella wedge salad

Indulge in the flavors of a classic Mortadella wedge salad. Delight in the savory mortadella paired with crisp lettuce, drizzled with tangy dressing. Taste perfection!

Ingredients:

  • large head of iceberg lettuce
  • cup sliced pickled jalapeños
  • cup basil and/or mint leaves, plus more for serving
  • oz. thinly sliced mortadella, torn into large pieces
  • Kosher salt, freshly ground pepper
  • lemon
  • cup buttermilk
  • cup sour cream
  • cup extra-virgin olive oil
  • garlic clove

Instructions:

  1. Cut the iceberg lettuce into quarters by slicing through the stem. Discard any old outer leaves. Place jalapeños and 1/2 cup of herbs in between the layers of the lettuce, making sure to distribute them evenly. Insert 2-3 pieces of mortadella into each quarter and season with salt and pepper. Grate lemon zest finely over the quarters and then divide the lemon into halves.
  2. Extract the juice from one half of the lemon into a measuring cup or a medium-sized bowl. Combine the lemon juice with buttermilk, sour cream, and oil. Grate a garlic clove finely and add it to the mixture. Stir everything together until well combined. Season the dressing with salt and pepper.
  3. Squeeze the juice from the other half of the lemon over the lettuce quarters, ensuring that both cut sides are covered in lemon juice. Drizzle the prepared dressing over the quarters and sprinkle with a bit of pepper and additional herbs as garnish.
