Mom's warm potato salad

Ingredients:
- 910g Yukon Gold potatoes (about 3 large), cut into uniform 1/2 to 1-inch pieces
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/3 cup chopped flavorful olives - green or Kalamata
- 1/4 cup chopped fresh parsley
- 1/4 cup seasoned rice vinegar
- 1/4 cup extra virgin olive oil
- Kosher salt and freshly ground black pepper to taste
Instructions:
- Place the diced potatoes in a saucepan, add enough cold water to cover them by an inch. Season the water with a tablespoon of salt for every 2 quarts of water. Bring the water to a boil, then lower the heat to simmer and cover the saucepan.
- Allow the potatoes to simmer for around 10 minutes or until they can be easily pierced with a fork. Drain the potatoes thoroughly.
- Transfer the potatoes to a large serving bowl and mix in the celery, red onion, olives, and parsley.
- Drizzle the warm potatoes with rice vinegar and oil to let them soak up the flavors of the dressing.
- Season with salt and pepper to your liking. Adjust the amount of vinegar and oil as needed.
