Mom's warm potato salad

Indulge in the comforting flavors of Mom's warm potato salad - a delectable blend of creamy potatoes, crisp veggies, and savory dressing.

Ingredients:

  • 910g Yukon Gold potatoes (about 3 large), cut into uniform 1/2 to 1-inch pieces
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/3 cup chopped flavorful olives - green or Kalamata
  • 1/4 cup chopped fresh parsley
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper to taste

Instructions:

  1. Place the diced potatoes in a saucepan, add enough cold water to cover them by an inch. Season the water with a tablespoon of salt for every 2 quarts of water. Bring the water to a boil, then lower the heat to simmer and cover the saucepan.
  2. Allow the potatoes to simmer for around 10 minutes or until they can be easily pierced with a fork. Drain the potatoes thoroughly.
  3. Transfer the potatoes to a large serving bowl and mix in the celery, red onion, olives, and parsley.
  4. Drizzle the warm potatoes with rice vinegar and oil to let them soak up the flavors of the dressing.
  5. Season with salt and pepper to your liking. Adjust the amount of vinegar and oil as needed.
  6. Present the dish while it's still warm.
