Modified laap muu (lao pork salad)

Ingredients:

  • 500g Pork Loin Steaks
  • 1 medium Onion (preferably red)
  • 2-3 red or green chillies
  • 1-2 tablespoons Mint
  • 2 teaspoons Sesame Oil
  • 2 tablespoons Ground Toasted Rice

Instructions:

  1. Cook pork loin steaks on a barbecue or griddle pan until they are cooked through and have a nice color on both sides. Set them aside to cool.
  2. Warm up some oils in a pan. Chop the onion and chilli finely before putting them into the pan. Saute them until the raw onion flavor is gone but they still have some crunch.
  3. Once the pork steaks have cooled down, cut them into small pieces and add them to the pan.
  4. Put in the crushed toasted rice.
  5. Pour in the lime juice and fish sauce. Mix everything together and let it cook for a short while. Take it off the heat and mix in the finely chopped mint (you can use lemon mint for a unique floral and citrus taste).
  6. Let it cool down until it's just warm or reaches room temperature, season with more fish sauce and lime juice to taste, garnish with extra mint leaves, and serve.
