Modified laap muu (lao pork salad)

Ingredients:
- 500g Pork Loin Steaks
- 1 medium Onion (preferably red)
- 2-3 red or green chillies
- 1-2 tablespoons Mint
- 2 teaspoons Sesame Oil
- 2 tablespoons Ground Toasted Rice
Instructions:
- Cook pork loin steaks on a barbecue or griddle pan until they are cooked through and have a nice color on both sides. Set them aside to cool.
- Warm up some oils in a pan. Chop the onion and chilli finely before putting them into the pan. Saute them until the raw onion flavor is gone but they still have some crunch.
- Once the pork steaks have cooled down, cut them into small pieces and add them to the pan.
- Put in the crushed toasted rice.
- Pour in the lime juice and fish sauce. Mix everything together and let it cook for a short while. Take it off the heat and mix in the finely chopped mint (you can use lemon mint for a unique floral and citrus taste).
- Let it cool down until it's just warm or reaches room temperature, season with more fish sauce and lime juice to taste, garnish with extra mint leaves, and serve.
