Mixed greens with carrot-ginger dressing

Ingredients:
- 1 cup chopped carrots
- 2 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon grated fresh ginger
- 1 tablespoon ketchup
- 1 tablespoon pure maple syrup
- 1 tablespoon water
- 1 ½ teaspoons reduced-sodium tamari or soy sauce (see Tip)
- ¼ teaspoon salt
- ¼ cup grapeseed oil
- 8 cups mixed salad greens
- 4 cups shredded red cabbage
Instructions:
- Put together carrots, lime juice, vinegar, ginger, ketchup, maple syrup, water, tamari (or soy sauce) and salt in a blender. Blend until finely minced. While the blender is on, gradually pour in oil and blend until creamy.
- In a big bowl, mix greens and cabbage. Pour the dressing and mix.
