Mixed greens with carrot-ginger dressing

Ingredients:

  • 1 cup chopped carrots
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon ketchup
  • 1 tablespoon pure maple syrup
  • 1 tablespoon water
  • 1 ½ teaspoons reduced-sodium tamari or soy sauce (see Tip)
  • ¼ teaspoon salt
  • ¼ cup grapeseed oil
  • 8 cups mixed salad greens
  • 4 cups shredded red cabbage

Instructions:

  1. Put together carrots, lime juice, vinegar, ginger, ketchup, maple syrup, water, tamari (or soy sauce) and salt in a blender. Blend until finely minced. While the blender is on, gradually pour in oil and blend until creamy.
  2. In a big bowl, mix greens and cabbage. Pour the dressing and mix.
