Mixed green salad with homemade dijon balsamic dressing

Ingredients:

  • Dijon Balsamic Dressing
  • 5 teaspoons dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • Mixed Green Salad
  • 4 cups mixed greens
  • 1/4 cup steamed lentils
  • 2 pieces steamed beets
  • 1 handful mini heirloom tomatoes
  • 1 teaspoon chia seeds
  • 1 pinch fresh shaved parmesan cheese
  • 1/2 piece avocado

Instructions:

  1. Combine all the ingredients for the Dijon Balsamic Dressing in a small bowl and mix until they form a smooth mixture - set aside
  2. Dice the beets, mini heirloom tomatoes, & avocado into bite-sized pieces
  3. Put the mixed greens in a large bowl & add lentils, beets, tomatoes, chia seeds, & parmesan cheese on top
  4. Pour the desired quantity of Dijon Balsamic Dressing over the salad and mix
  5. Garnish with avocado on top & savor!
