Mixed green salad with homemade dijon balsamic dressing

Ingredients:
- Dijon Balsamic Dressing
- 5 teaspoons dijon mustard
- 1 tablespoon extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- Mixed Green Salad
- 4 cups mixed greens
- 1/4 cup steamed lentils
- 2 pieces steamed beets
- 1 handful mini heirloom tomatoes
- 1 teaspoon chia seeds
- 1 pinch fresh shaved parmesan cheese
- 1/2 piece avocado
Instructions:
- Combine all the ingredients for the Dijon Balsamic Dressing in a small bowl and mix until they form a smooth mixture - set aside
- Dice the beets, mini heirloom tomatoes, & avocado into bite-sized pieces
- Put the mixed greens in a large bowl & add lentils, beets, tomatoes, chia seeds, & parmesan cheese on top
- Pour the desired quantity of Dijon Balsamic Dressing over the salad and mix
- Garnish with avocado on top & savor!
