Mixed green salad with cranberry vinaigrette

Ingredients:

  • 1 1/4 cups whole cranberry sauce
  • 2 tablespoons orange juice
  • 2 tablespoons balsamic vinaigrette
  • 1 pinch sugar
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/2 (5-ounce) bag herbed croutons

Instructions:

  1. Warm up the cranberry and orange juice in a small saucepan on medium heat until it starts boiling. Take it off the heat and allow it to cool.
  2. Filter the cranberry mixture into a big bowl using a fine sieve. Stir in the vinaigrette and sugar until thoroughly mixed.
  3. Combine the salad mix and half of the dressing in a large bowl and mix with tongs until the lettuce is covered. Add tomatoes and cucumber slices and lightly mix. If needed, add extra dressing. Move to a serving dish and sprinkle croutons on top.
