Mixed green salad with chicken & sour cherry vinaigrette

Ingredients:
- ½ cup sour cherries, pitted and chopped
- 1 teaspoon granulated sugar
- 450g boneless, skinless chicken breast, trimmed
- 3 ½ tablespoons extra-virgin olive oil, divided
- 2 teaspoons finely chopped fresh thyme, divided
- ½ teaspoon salt, divided
- ½ teaspoon ground pepper, divided
- 2 tablespoons white balsamic vinegar
- 1 tablespoon minced shallot
- 140g mixed salad greens
- ½ cup crumbled blue cheese
- ½ cup chopped walnuts, toasted (see Tip)
- ¼ cup dried sour cherries
Instructions:
- Mix together tart cherries and granulated sugar in a spacious bowl; keep aside.
- Prepare the grill by setting it to medium-high heat. Coat the chicken with 0.5 tablespoon of oil and season with 1 teaspoon of thyme, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Grill the chicken, turning it over once, until it reaches an internal temperature of 165°F, approximately 12 minutes.
- Meanwhile, combine vinegar, shallot, the remaining 1 teaspoon of thyme, and 1/4 teaspoon each of salt and pepper with the cherries. Gradually whisk in the remaining 3 tablespoons of oil. Add the mixed greens, cheese, walnuts, and dried cherries; mix gently to cover. Cut the chicken into slices and place them on the salad before serving.
