Mixed garden greens salad with homemade low-calorie french salad dressing

Ingredients:

  • ¼ cup low-sodium tomato juice or vegetable juice
  • 3 tablespoons vinegar
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon ground pepper
  • ⅛ teaspoon salt
  • ⅓ cup olive oil
  • 2 cups torn romaine
  • 2 cups fresh spinach leaves
  • 1 ½ cups torn curly endive
  • 1 ½ cups arugula
  • 2 small red, green, and/or yellow bell peppers, cut into thin strips
  • 1 small red onion, thinly sliced
  • 1 cup red or yellow grape, pear, or cherry tomatoes, halved
  • 1 medium carrot, thinly shaved and curled (see Tip)
  • 30g Wisconsin Cheddar cheese, finely grated (1/4 cup)

Instructions:

  1. Blend tomato juice, vinegar, honey, paprika, garlic, Worcestershire sauce, ground pepper, and salt together in a blender. While blending, gradually pour in olive oil through the opening in the lid; keep blending until the mixture achieves the desired thickness.
  2. Mix romaine, spinach, curly endive, arugula, bell pepper strips, red onion, and cherry tomatoes together. Garnish with shaved carrot and Cheddar cheese. Drizzle with dressing before serving.
