Mixed garden greens salad with homemade low-calorie french salad dressing

Ingredients:
- ¼ cup low-sodium tomato juice or vegetable juice
- 3 tablespoons vinegar
- 1 tablespoon honey
- 1 teaspoon paprika
- 1 clove garlic, minced
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon ground pepper
- ⅛ teaspoon salt
- ⅓ cup olive oil
- 2 cups torn romaine
- 2 cups fresh spinach leaves
- 1 ½ cups torn curly endive
- 1 ½ cups arugula
- 2 small red, green, and/or yellow bell peppers, cut into thin strips
- 1 small red onion, thinly sliced
- 1 cup red or yellow grape, pear, or cherry tomatoes, halved
- 1 medium carrot, thinly shaved and curled (see Tip)
- 30g Wisconsin Cheddar cheese, finely grated (1/4 cup)
Instructions:
- Blend tomato juice, vinegar, honey, paprika, garlic, Worcestershire sauce, ground pepper, and salt together in a blender. While blending, gradually pour in olive oil through the opening in the lid; keep blending until the mixture achieves the desired thickness.
- Mix romaine, spinach, curly endive, arugula, bell pepper strips, red onion, and cherry tomatoes together. Garnish with shaved carrot and Cheddar cheese. Drizzle with dressing before serving.
