Minted beet salad

Ingredients:
- 910g beets
- 1 quart salted water
- 3 tablespoons butter
- 3 tablespoons fresh chopped mint
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
- Add the beets to a pot of boiling water with 1 tablespoon of salt. Let it boil, then simmer until the beets are soft, approximately 30 to 40 minutes.
- Take off the heat and let the beets cool down in the water before removing them. Get rid of the water and peel the beets using paper towels. Cut them into wedges.
- In a small saucepan, melt the butter, then put in the beets. Cook for a few minutes, then toss in the mint. Ensure the beets are coated well. Finally, season with lemon juice, salt, and pepper.
