Mint julep cucumber salad

Ingredients:
- 1 cup white wine vinegar
- 1 cup sugar
- 1/2 cup honey
- 3 tablespoons bourbon
- Kosher salt
- 4 Kirby cucumbers, thinly sliced into half moons
- 1 medium sweet onion, halved and thinly sliced
- 3 sprigs mint, leaves chopped
Instructions:
- Mix together the vinegar, sugar, honey, bourbon, and 1 teaspoon of salt in a saucepan on medium heat. Heat until it starts to simmer, stirring to make sure the sugar and salt are completely dissolved. Allow it to cool.
- In a large bowl, mix the cucumbers and onion. Pour the vinegar mixture over them and place in the refrigerator to chill for 3 to 4 hours. Prior to serving, include the mint and mix everything together.
