Mint julep cucumber salad

Experience a refreshing burst of flavors with this mint julep cucumber salad. Fresh mint and crisp cucumbers combined for a delicious, invigorating dish.

Ingredients:

  • 1 cup white wine vinegar
  • 1 cup sugar
  • 1/2 cup honey
  • 3 tablespoons bourbon
  • Kosher salt
  • 4 Kirby cucumbers, thinly sliced into half moons
  • 1 medium sweet onion, halved and thinly sliced
  • 3 sprigs mint, leaves chopped

Instructions:

  1. Mix together the vinegar, sugar, honey, bourbon, and 1 teaspoon of salt in a saucepan on medium heat. Heat until it starts to simmer, stirring to make sure the sugar and salt are completely dissolved. Allow it to cool.
  2. In a large bowl, mix the cucumbers and onion. Pour the vinegar mixture over them and place in the refrigerator to chill for 3 to 4 hours. Prior to serving, include the mint and mix everything together.
