Ingredients:

  • 2 (8-ounce) portions ground beef
  • 4 slices fresh mozzarella cheese
  • 4 slices pancetta

  • 3 cloves garlic
  • 3 or 4 basil leaves
  • 2 teaspoons crushed red pepper flakes
  • 2 burger buns, your choice
  • Baby arugula
  • 4 slices tomato

  • 1/2 bunch fresh basil leaves
  • 1 cup ketchup
  • 2 cloves garlic
  • 1/2 teaspoon crushed red pepper flakes

Instructions:

  1. Preheat the oven to 180 °C. Prepare a large skillet.
  2. Separate the beef into 2 equal portions and form them into patties (you should end up with a total of 4 patties). Put 2 mozzarella slices on one patty, then place another patty on top. Seal the edges of the patties to keep the cheese inside, essentially creating stuffed burgers with mozzarella. Wrap each burger with 2 pancetta slices.
  3. Heat 1 tablespoon of olive oil in a medium skillet that can be used in the oven over medium heat and sear each burger on both sides. Transfer the burgers to the preheated oven to complete the cooking process.
  4. In a small saucepan, melt the butter and take it off the heat. Meanwhile, finely chop the garlic and basil, then mix them with the butter and 1 teaspoon of red pepper flakes. Spread this mixture on the burger buns and toast them in the broiler or a toaster oven.
  5. Combine the arugula, a drizzle of olive oil, to your preference, and the remaining 1 teaspoon of crushed red pepper flakes in a bowl.
  6. Place the burgers on the bottom halves of the buns, add tomato slices, arugula salad, and Basil Ketchup on top.
