Mimosa salad

Delicious Mimosa Salad bursting with vibrant colors and flavors, a perfect blend of fresh ingredients creating a refreshing and satisfying culinary experience.

Ingredients:

  • 1/4 cup Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup champagne vinegar
  • 1 medium shallot, finely chopped
  • 1/2 cup extravirgin olive oil
  • 2 heads butter lettuce, pale inner leaves only, torn into bite sized pieces
  • 2 large hardboiled eggs, whites cut into 1/4inch dice and yolks pressed through a sieve

Instructions:

  1. Combine the mustard, salt, pepper, vinegar, and shallot in a glass bowl. Slowly pour the olive oil in while whisking continuously until the dressing is well blended.
  2. Mix the lettuce with the dressing in a big bowl to ensure it is well coated. Serve individual portions of the salad on 6 cold plates and top them with diced egg white and a sprinkle of sieved yolk.
