Middle eastern salad bowls with farro & chicken

Enjoy a flavorful Middle Eastern salad bowl packed with delicious farro and tender chicken. Taste the exotic blend of spices and fresh ingredients.

Ingredients:

  • 1/2 cup microwaveable farro
  • 1 (230g) container Middle Eastern bean salad (balela)
  • ½ cup balsamic vinaigrette
  • 1 (140g) package baby spinach
  • 1 (340g) package lemon-pepper seasoned cooked chicken breast, sliced
  • ¼ cup crumbled feta cheese with Mediterranean herbs

Instructions:

  1. Cook farro in the microwave following the instructions on the package. Let it cool for 5 minutes, then place it in a bowl and combine it with the bean salad. Keep it aside.
  2. Put 2 tablespoons of vinaigrette in each of 4 small containers that have lids and store them in the refrigerator for a maximum of 4 days.
  3. Divide the spinach into 4 individual containers with lids. Add a quarter of the farro-bean salad mixture, a quarter of the sliced chicken breast, and 2 tablespoons of feta cheese on top of each portion of spinach. Close the containers tightly and refrigerate for up to 4 days. Add the vinaigrette right before you are ready to eat.
