Middle eastern cucumber and bulgur salad

Ingredients:

  • 200 grams Bulgur
  • 1.5 Large Cucumber
  • 2 Garlic Cloves
  • 1 Handful of Fresh Mint
  • 1 Handful of Fresh Coriander
  • 1 Green Chilli
  • 1 Thumb-sized Piece of Tamarind
  • 2 Dates (Alternative to Tamarind)
  • 1 Lemon, Juice
  • 1 pinch Salt
  • 1/2 teaspoon Mustard Seeds
  • 4 Radishes
  • Edible flowers for decoration (optional)

Instructions:

  1. To start, place the bulgur in hot boiling water for half an hour, then strain, getting rid of all the extra water
  2. While the bulgur is soaking, dice the cucumber into your preferred size and shape and set it aside. You can slice the cucumber thinly with a vegetable peeler if you like. Keep half of the cucumber for the sauce.
  3. In a food processor (or blender), combine the set aside cucumber, mint, coriander leaves, garlic, green chili, tamarind (or dates) and blend until roughly mixed together.
  4. Next, mix in lemon juice, a bit of salt, olive oil, mustard, and nigella seeds. Stir well.
  5. Combine the dressing with the chopped cucumbers thoroughly. Alternatively, you can serve the sauce separately.
  6. Arrange the soaked bulgur on a large serving plate and add the cucumber and dressing mixture on top.
  7. Garnish with sliced radishes and, if desired, edible flowers
