Microwave artichokes

Ingredients:

  • 2 globe artichokes, about 8 to 340g each
  • Melted butter and lemon wedges if you are serving them hot
  • Vinaigrette or salad dressing, if you are serving them chilled

Instructions:

  1. Trim the stem and base of the artichokes with a sharp knife to make them stable. Slice off the top of the leaves horizontally, parallel to the base. Neaten the edges of the leaves with scissors.
  2. For traditional cooking, boil a large, wide pan filled with salted water. Immerse the artichokes and cover them with a heatproof heavy plate to ensure they are fully submerged. Cook for 35 to 45 minutes or until a leaf from the center can be easily removed. Drain them upside down to let any excess water flow out.
  3. If using a microwave, wrap each artichoke individually in microwave-safe plastic wrap and place them in a circular dish. Microwave for 10 minutes or until a center leaf can be pulled out effortlessly. Carefully remove the plastic wrap as it will be hot.
  4. When serving, allow each person to pull off a leaf and dip it in melted butter. Alternatively, remove the cluster of outer leaves at once and save them for later. Use a small spoon to scoop out the choke. Flip the cluster of leaves upside down and serve with melted butter seasoned with lemon or vinaigrette.
