Microwave artichokes

Ingredients:
- 2 globe artichokes, about 8 to 340g each
- Melted butter and lemon wedges if you are serving them hot
- Vinaigrette or salad dressing, if you are serving them chilled
Instructions:
- Trim the stem and base of the artichokes with a sharp knife to make them stable. Slice off the top of the leaves horizontally, parallel to the base. Neaten the edges of the leaves with scissors.
- For traditional cooking, boil a large, wide pan filled with salted water. Immerse the artichokes and cover them with a heatproof heavy plate to ensure they are fully submerged. Cook for 35 to 45 minutes or until a leaf from the center can be easily removed. Drain them upside down to let any excess water flow out.
- If using a microwave, wrap each artichoke individually in microwave-safe plastic wrap and place them in a circular dish. Microwave for 10 minutes or until a center leaf can be pulled out effortlessly. Carefully remove the plastic wrap as it will be hot.
- When serving, allow each person to pull off a leaf and dip it in melted butter. Alternatively, remove the cluster of outer leaves at once and save them for later. Use a small spoon to scoop out the choke. Flip the cluster of leaves upside down and serve with melted butter seasoned with lemon or vinaigrette.
