Meyer lemon, radish, cucumber and tomato salad with citrus dressing
Enjoy a refreshing Meyer lemon, radish, cucumber, and tomato salad with a zesty citrus dressing. A burst of flavors in every bite!
Ingredients:
- 570g grape tomatoes, sliced in half
- 1/2 large English cucumber, diced
- 1 bunch radishes, sliced
- 1/2 cup fresh mint, roughly chopped
- 3 Meyer lemons
- 1 lime
- 1 clove garlic
- 1/2 teaspoon kosher salt
- 1/4 cup olive oil
Instructions:
- Mix together the tomatoes, cucumber, radishes, and mint in a large bowl for serving.
- Grate the zest of one lemon and one lime and place it into a glass container for blending. Squeeze the juice from one lemon and half a lime and pour it into the container. Use a mortar and pestle to mash the garlic clove with the salt until it becomes a smooth paste. Combine the garlic paste and olive oil in the container. Close the container and shake well until everything is thoroughly mixed.
- Remove the skin and white parts from the remaining two Meyer lemons. Cut the lemons into sections and take out any seeds. Add the lemon pieces to the vegetable mixture in the serving bowl.
- Just before serving, mix the prepared dressing with the salad and check the seasoning.
