Mesclun salad

Delight your taste buds with a vibrant Mesclun salad bursting with fresh flavors of mixed greens and zesty vinaigrette dressing. Perfect for a light and refreshing meal.

Ingredients:

  • 2 tablespoons butter
  • 1 dash cayenne pepper
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup halved pecans
  • 1 red bell pepper
  • 2 oranges
  • 1 tablespoon olive oil
  • Fresh pepper
  • 2 cups mesclun greens

Instructions:

  1. Melt 2 tablespoons of whole butter in a small saute pan and add a dash of cayenne, 3 tablespoons of sugar, 1/2 teaspoon of salt, and 1/2 cup of pecans. Cook the mixture slowly over low heat, stirring carefully and occasionally. Be cautious as the sugar can easily burn if the heat is too high. Next, julienne the red pepper on a steady cutting board and peel and section 2 oranges. Squeeze the remaining orange pulp into a large bowl and mix in 1 tablespoon of olive oil. Coat the salad greens with this dressing, then transfer them to a salad plate. Arrange the orange and red pepper slices on top and decorate with the caramelized pecan halves. Let the pecans cool down before serving.
