Melon, tomato & onion salad with goat cheese
Enjoy the refreshing blend of sweet melon, juicy tomato and tangy onion, topped with creamy goat cheese. A deliciously vibrant salad bursting with flavors.
Ingredients:
- 1 tablespoon white balsamic vinegar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- ½ large cantaloupe, cubed (1 1/2 cups) (see Tip)
- ½ large cucumber, halved lengthwise and sliced (1 1/2 cups) (see Tip)
- 3 tablespoons crumbled feta cheese
- 1 tablespoon snipped fresh basil
- 1 tablespoon snipped fresh mint
Instructions:
- For making Balsamic Vinaigrette, mix white balsamic vinegar, salt, and black pepper in a small bowl. Add olive oil gradually while whisking. Keep it aside.
- For making Cantaloupe and Cucumber Salad: Combine cantaloupe, cucumber, feta cheese, basil, and mint in a large bowl by tossing them together.
- Pour the vinaigrette over the cantaloupe mixture. Gently mix. Serve right away.
