Melon-kiwi salad with coconut yogurt

Ingredients:

  • 1/2 cantaloupe, halved, peeled and cut into 1/2-inch-thick slices
  • 1/2 honeydew melon, halved, peeled and cut into 1/2-inch-thick slices
  • 4 golden kiwis, peeled and thinly sliced
  • 230g plain unsweetened coconut yogurt
  • 1 tablespoon honey
  • 1 teaspoon finely grated lemon zest, plus 2 teaspoons lemon juice
  • 1/2 teaspoon vanilla bean paste
  • Toasted coconut flakes, for topping

Instructions:

  1. Place the cantaloupe, honeydew, and kiwi slices on a big serving dish.
  2. Mix together the yogurt, honey, lemon peel and juice, and the vanilla bean paste in a tiny bowl. Stir thoroughly until well combined. Spoon or pour the yogurt mixture over the fruit and top with the shredded coconut.
