Melon and prosciutto pasta salad

Delight in the harmonious blend of sweet melon and savory prosciutto in this refreshing pasta salad bursting with unique flavors and textures.

Ingredients:

  • 110g gemelli pasta
  • 3 tablespoon olive oil
  • 2 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon each salt and pepper
  • 1/2 small honeydew melon
  • 1/2 small cantaloupe
  • 12 cocktail bocconcini
  • 3 slices prosciutto, torn
  • 4 cup baby spinach
  • 1/4 cup fresh basil leaves, torn

Instructions:

  1. Prepare gemelli following the instructions on the package. After cooking, drain and allow to cool down completely.
  2. While the pasta is cooling, mix olive oil, vinegar, honey, salt, and pepper in a bowl; mix this with the pasta.
  3. With a melon baller, create 12 small balls from each melon and cantaloupe; mix these melon balls, bocconcini, and prosciutto with the pasta. Mix thoroughly. Add spinach and basil to this mixture.
