Melon and prosciutto pasta salad
Delight in the harmonious blend of sweet melon and savory prosciutto in this refreshing pasta salad bursting with unique flavors and textures.
Ingredients:
- 110g gemelli pasta
- 3 tablespoon olive oil
- 2 tablespoon white wine vinegar
- 1 teaspoon honey
- 1/4 teaspoon each salt and pepper
- 1/2 small honeydew melon
- 1/2 small cantaloupe
- 12 cocktail bocconcini
- 3 slices prosciutto, torn
- 4 cup baby spinach
- 1/4 cup fresh basil leaves, torn
Instructions:
- Prepare gemelli following the instructions on the package. After cooking, drain and allow to cool down completely.
- While the pasta is cooling, mix olive oil, vinegar, honey, salt, and pepper in a bowl; mix this with the pasta.
- With a melon baller, create 12 small balls from each melon and cantaloupe; mix these melon balls, bocconcini, and prosciutto with the pasta. Mix thoroughly. Add spinach and basil to this mixture.
