Medley of greens with buttermilk dressing

Ingredients:
- 2 large tomatoes, cut into wedges
- 2 cucumbers, peeled and cut into thin slices
- 2 carrots, peeled and sliced thin
- 1 to 2 shallots, diced
- 110g feta cheese, cubed
- 1 lime
- 1 tablespoon fresh parsley
- 1 tablespoon fresh chives
- 1 tablespoon fresh dill
- 1 clove garlic, peeled and quartered
- 3/4 cup buttermilk
- 1 teaspoon xanthan gum
- Salt and pepper
Instructions:
- For preparing the Salad:
- Combine mixed greens, cherry tomatoes, sliced cucumbers, shredded carrots, and chopped shallots in a large bowl. Drizzle enough dressing over the salad ingredients to cover them entirely. Finish by adding diced feta cheese on the top.
- Heat a lime in the microwave for around 30 seconds to extract the essential oils. Let it cool down before using.
- Steps to make the Dressing:
- Start the blender and gradually add parsley, chives, dill, and garlic one by one through the opening in the lid. Blend the ingredients until they form a smooth paste. By this time, the lime should be at a suitable temperature for squeezing. Keep the blender running as you juice the lime through the top opening. Slowly pour in the buttermilk and xanthan gum until the mixture thickens enough to coat the back of a spoon. Season with salt and pepper according to your taste. Transfer the dressing to the refrigerator for cooling. Once chilled, the dressing should have a consistency similar to mayonnaise.
