Mediterranean tuna salad

Indulge in the flavors of the Mediterranean with this refreshing and vibrant tuna salad. Packed with fresh ingredients and zesty vinaigrette, it's a culinary delight in every bite.

Ingredients:

  • 2 teaspoons dijon mustard
  • Grated zest and juice of 1 lemon
  • 1/3 cup extra-virgin olive oil, plus more for brushing
  • 1/4 cup chopped fresh dill
  • Kosher salt and freshly ground pepper
  • 1 12-ounce can solid white tuna in water, drained and flaked
  • 1 14-ounce can chickpeas, drained and rinsed
  • 1 Kirby cucumber, seeded and chopped
  • 1 bunch scallions, sliced
  • 1 pint cherry or grape tomatoes, halved
  • 2 pieces pita or naan bread
  • 1 head romaine lettuce, shredded

Instructions:

  1. Prepare the dressing by combining mustard, lemon zest, lemon juice, olive oil, dill, salt, and pepper in a small bowl. Mix well until smooth and blended.
  2. Mix the tuna, chickpeas, cucumber, scallions, and tomatoes with 1/4 cup of the prepared dressing in a medium-sized bowl.
  3. Preheat a grill pan over medium-high heat. Lightly coat both sides of the pita with olive oil and sprinkle with salt and pepper. Grill until each side turns golden, approximately 1 minute per side. Allow to cool slightly before cutting into wedges.
  4. Combine the romaine lettuce with the remaining dressing and distribute evenly into serving bowls. Top with the tuna salad and accompany with the grilled pita wedges.
