Mediterranean tuna salad

Ingredients:
- 2 5-oz. cans chunk light tuna in water, drained
- ⅓ cup mayonnaise
- 1 tablespoon fresh lemon juice
- ½ teaspoon Dijon mustard
- Salt and pepper
- ⅓ cup chopped roasted red peppers
- ¼ cup pitted black olives, roughly chopped
- 1 teaspoon olive oil
- 1 teaspoon balsamic vinegar
- 1 ½ cups shredded romaine lettuce
- Whole-grain crackers, optional
Instructions:
- Combine the initial 4 components in a medium-sized bowl and mix thoroughly. Add salt and pepper to taste. Transfer half of the tuna salad to an airtight container. Cover and refrigerate (can be stored in the refrigerator for a maximum of one week). Mix bell peppers and olives into the rest of the salad.
- In another medium bowl, pour olive oil and vinegar over the lettuce; mix well. Season with salt and pepper, then mix again. Top the lettuce with the tuna salad; serve with crackers, if preferred.
