Mediterranean "salad pasta" (not to be confused with "pasta salad")

Ingredients:
- 450g your favorite pasta (spaghetti, rotini, mostaccioli, etc...)
- 1 large, ripe Roma tomato
- 110g feta cheese
- 1 handful Italian flat leaf parsley
- 1 large clove of garlic
- 2 tablespoons extra virgin olive oil
- fresh ground black pepper to taste
Instructions:
- Boil the pasta in salted water until it reaches the desired tenderness. While the pasta is cooking, crumble the feta cheese after soaking it (you can use pre-crumbled feta cheese), chop the tomatoes, parsley, and garlic.Once the pasta is ready, drain it and portion it into bowls. Heat olive oil in a small saute pan, then add and saute the crushed garlic until it becomes slightly browned (be mindful not to burn it). Drizzle the garlic-infused oil over the pasta and gently mix.Layer the pasta with feta cheese, tomatoes, parsley, and sprinkle some freshly ground black pepper on top. Serve immediately while the pasta is still warm!
