Mediterranean quinoa salad with feta cheese

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups water
  • Pinch of kosher or sea salt
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 1 medium clove garlic, minced
  • 1/2 teaspoon kosher or sea salt
  • Fresh cracked black pepper, to taste
  • 170g cherry tomatoes, sliced in half
  • 1/4 cup chopped basil
  • 1/4 cup chopped Italian parsley
  • 110g feta cheese, crumbled

Instructions:

  1. Mix the quinoa, water, and salt in a medium saucepan. Bring the mixture to a boil, then lower the heat and cover the pan.
  2. Simmer gently, with the lid on, for 15 minutes (there may still be some liquid not yet absorbed). Take the saucepan off the heat.
  3. While keeping the pan covered, let it sit for 5 minutes, or until the remaining liquid is absorbed. Remove the cover and lightly stir the quinoa with a fork. Put it aside to cool completely.
  4. In a bowl, combine the olive oil, apple cider vinegar, lemon juice, garlic, salt, and pepper using a whisk.
  5. Toss together the cooled quinoa, cherry tomatoes, basil, parsley, feta cheese, and dressing in a large bowl. Serve either at room temperature or chilled.
