Mediterranean quinoa salad with feta cheese

Ingredients:
- 1 cup uncooked quinoa
- 2 cups water
- Pinch of kosher or sea salt
- 1/4 cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons fresh lemon juice
- 1 medium clove garlic, minced
- 1/2 teaspoon kosher or sea salt
- Fresh cracked black pepper, to taste
- 170g cherry tomatoes, sliced in half
- 1/4 cup chopped basil
- 1/4 cup chopped Italian parsley
- 110g feta cheese, crumbled
Instructions:
- Mix the quinoa, water, and salt in a medium saucepan. Bring the mixture to a boil, then lower the heat and cover the pan.
- Simmer gently, with the lid on, for 15 minutes (there may still be some liquid not yet absorbed). Take the saucepan off the heat.
- While keeping the pan covered, let it sit for 5 minutes, or until the remaining liquid is absorbed. Remove the cover and lightly stir the quinoa with a fork. Put it aside to cool completely.
- In a bowl, combine the olive oil, apple cider vinegar, lemon juice, garlic, salt, and pepper using a whisk.
- Toss together the cooled quinoa, cherry tomatoes, basil, parsley, feta cheese, and dressing in a large bowl. Serve either at room temperature or chilled.
