Mediterranean portobello burger

Indulge in the savory flavors of a Mediterranean-inspired portobello burger. Bursting with bold taste, this dish is a culinary delight.

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • ¼ teaspoon salt, divided
  • Freshly ground pepper to taste
  • ¼ cup plain dry breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon extra-virgin olive oil

Instructions:

  1. Preheat the oven to 230 °C. Grease a baking sheet with cooking spray.
  2. Arrange the mushroom caps with the gills facing upwards on the greased pan. Season with a pinch of salt and pepper. Bake until they are soft, which usually takes around 20 minutes.
  3. While the mushrooms are cooking, mix together breadcrumbs, Parmesan cheese, chopped parsley, oil, the remaining pinch of salt, and pepper in a small bowl. Take the mushrooms out of the oven and evenly distribute about 2 tablespoons of the breadcrumb mixture on top of each cap. Put them back in the oven and bake until the breadcrumbs turn golden brown, approximately 5 minutes.
