Mediterranean portobello burger

Ingredients:
- 4 large portobello mushrooms, stems removed
- ¼ teaspoon salt, divided
- Freshly ground pepper to taste
- ¼ cup plain dry breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon minced fresh parsley
- 1 tablespoon extra-virgin olive oil
Instructions:
- Preheat the oven to 230 °C. Grease a baking sheet with cooking spray.
- Arrange the mushroom caps with the gills facing upwards on the greased pan. Season with a pinch of salt and pepper. Bake until they are soft, which usually takes around 20 minutes.
- While the mushrooms are cooking, mix together breadcrumbs, Parmesan cheese, chopped parsley, oil, the remaining pinch of salt, and pepper in a small bowl. Take the mushrooms out of the oven and evenly distribute about 2 tablespoons of the breadcrumb mixture on top of each cap. Put them back in the oven and bake until the breadcrumbs turn golden brown, approximately 5 minutes.
