Mediterranean pasta salad

Ingredients:
- Kosher salt
- 450g tricolor pasta, such as bow tie or fusilli
- 1/4 cup balsamic vinegar
- 2 to 3 teaspoons dijon mustard
- Freshly ground pepper
- 2/3 to 3/4 cup extra-virgin olive oil
- 1/3 cup diced sun-dried tomatoes
- 1/4 cup fresh basil, julienned
- 1/4 cup diced onion
- 2 large pickled pepperoncini peppers, diced
- 3 tablespoons halved black olives
- 2 teaspoons chopped fresh oregano
- 40g feta cheese, crumbled
- 1 1/2 tablespoons grated romano cheese
Instructions:
- Start by boiling a large pot of water with some salt. Cook the pasta until it is firm when bitten; then, drain it and rinse with cold water to lower its temperature.
- While the pasta is cooking, prepare the vinaigrette: Mix together the vinegar, mustard, 1 teaspoon of salt, and a desired amount of pepper in a small bowl. Slowly add the oil until the dressing is smooth; adjust the seasoning with more salt and pepper if needed.
- In a separate bowl, combine the sun-dried tomatoes, basil, onion, pepperoncini, olives, and oregano. Mix in the cooked pasta along with 1/2 teaspoon of salt and 1 teaspoon of pepper. Pour in the vinaigrette, both kinds of cheeses, and toss everything together. Refrigerate until you are ready to serve.
