Mediterranean pasta salad

Ingredients:
- Kosher salt and freshly ground black pepper
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1 small shallot, minced
- 230g dried fusilli pasta
- 1/2 cup chopped green bell pepper
- 1/2 cup canned chickpeas, rinsed and drained
- 1/2 cup chopped cucumber
- 1/2 cup crumbled feta
- 1/4 cup chopped fresh flat-leaf parsley
- 2 medium vine-ripe tomatoes, chopped
Instructions:
- Start by heating a generous amount of salted water in a large pot until it boils.
- In a spacious bowl, combine olive oil, vinegar, shallot, 1/2 teaspoon of salt, and a few twists of pepper by whisking them together.
- Cook the pasta in the boiling water following the instructions on the package. After cooking, drain the pasta and rinse it with cold water to cool it down. Then, transfer it to the bowl with the prepared dressing.
- Mix in the bell peppers, chickpeas, cucumber, feta cheese, parsley, and cherry tomatoes with the pasta and dressing. Toss everything together gently. Adjust the seasoning with more salt and pepper if needed. For the best taste and texture, it's recommended to serve the pasta salad immediately.
