Mediterranean orzo salad

Experience Mediterranean flavors with our orzo salad recipe. This dish combines fresh ingredients like juicy tomatoes, tangy feta cheese, and aromatic herbs for a delicious and refreshing meal.

Ingredients:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic, minced
  • Kosher salt and freshly ground pepper
  • 230g orzo
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup red grape or cherry tomatoes, halved
  • 1 cup yellow grape or cherry tomatoes, halved
  • 1 cup pitted kalamata olives, halved
  • 1 cup crumbled feta cheese, plus more for topping
  • 2 tablespoons minced fresh parsley, plus more for topping
  • 1/2 red onion, diced

Instructions:

  1. Prepare the vinaigrette: Mix together the olive oil, lemon juice, minced garlic, and a dash of salt and pepper in a sealed container. Vigorously shake the container to blend the ingredients well.
  2. Prepare the pasta salad: Boil a pot of water. Cook the orzo according to the package instructions. Once cooked, strain the orzo and allow it to reach room temperature.
  3. In a spacious bowl, toss together the orzo, chickpeas, red and yellow cherry tomatoes, olives, crumbled feta cheese, chopped parsley, and diced red onion. Drizzle the vinaigrette over the ingredients and gently mix them. Taste the salad and season with extra salt and pepper if desired. Chill in the refrigerator for at least an hour before serving. Garnish with additional feta cheese and parsley.
