Mediterranean corn salad

Ingredients:

  • 4 cups Sweet Corn Nibs (off the cob)
  • 2 cups Cucumber diced
  • 2 cups Garbanzo Beans
  • 1.5 cups Feta Cheese
  • 1 cup Walnuts
  • 1 garlic clove
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup Oregano
  • 1/4 cup Lemon Juice
  • 1 pinch Pepper & Salt

Instructions:

  1. Preheat a cast iron skillet over high heat. Sauté corn in the dry skillet until golden brown, for approximately 3 minutes.
  2. Move the corn to a spacious bowl along with cucumber, chickpeas, and walnuts.
  3. Stir in fresh lemon juice, oregano, olive oil, minced garlic, and crumbled feta cheese.
