Mediterranean bulgar salad

Delicious Mediterranean bulgur salad recipe with fresh herbs, juicy tomatoes, crunchy cucumbers, and tangy feta cheese. A perfect blend of flavors!

Ingredients:

  • 3 cup vegetable broth
  • 1 1/2 cup uncooked bulgar
  • 6 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 2 tablespoon minced parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • one 15-ounce can garbanzo beans, rinsed and drained
  • 2 cup halved cherry tomatoes
  • 1 cup chopped cucumber
  • 8 green onions, sliced
  • one 4-ounce package crumbled feta cheese
  • 1/2 cup pine nuts, toasted

Instructions:

  1. Start by heating the broth and bulgur in a large saucepan over high heat until it boils. Lower the heat, put the lid on, and let it simmer for about 20 minutes until the bulgur is tender and most of the broth is soaked up. Take it off the heat and allow it to sit at room temperature without the lid until all the liquid is absorbed.
  2. Mix the oil, lemon juice, parsley, salt, and pepper in a small bowl. In a big serving bowl, mix together the bulgur, beans, tomatoes, cucumber, and onions. Pour the dressing over the mixture and stir well. Finally, sprinkle cheese and pine nuts on top for decoration.
