Mediterranean broccoli pasta salad

Ingredients:

  • 230g whole-wheat farfalle pasta
  • 6 cups broccoli florets
  • ½ cup chopped red bell pepper
  • ¼ cup chopped red onion
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh basil
  • ¾ cup mayonnaise
  • ½ cup finely chopped sun-dried tomatoes in oil, drained
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper

Instructions:

  1. Prepare a big bowl of cold water close to the stove. Heat up a big pot of water until boiling. Follow the instructions on the pasta package for cooking, and include broccoli to the boiling water for the last 2 minutes. Once ready, strain the pasta and broccoli, then put them into the cold water. Drain properly and move them to a large bowl; mix in bell pepper, onion, parsley, and basil.
  2. Mix together mayonnaise, sun-dried tomatoes, lemon zest, oregano, salt, and crushed red pepper in a small bowl. Combine this with the pasta mix; stir well to cover.
