Meal-prep vegan moroccan lettuce wraps

Ingredients:
- 2 heads butter or Bibb lettuce, leaves separated
- 1 1/2 cups cooked quinoa, cooled to room temperature (see Associated Recipes)
- 4 cups Bean Salad with Lemon-Cumin Dressing (see Associated Recipes)
- ⅓ cup chopped fresh mint (reserved from bean salad recipe)
Instructions:
- For a single serving of lettuce wraps: Put 3 lettuce leaves in a small container with a lid. Add 2 tablespoons of quinoa and 1/3 cup of bean salad on each leaf. Sprinkle 1 1/2 teaspoons of mint on each. Keep in the refrigerator for up to 1 day.
