Meal-prep vegan moroccan lettuce wraps

Delicious and flavorful meal-prep idea for vegan Moroccan lettuce wraps, bursting with exotic spices and fresh ingredients. Perfect for a healthy and satisfying lunch or dinner option.

Ingredients:

  • 2 heads butter or Bibb lettuce, leaves separated
  • 1 1/2 cups cooked quinoa, cooled to room temperature (see Associated Recipes)
  • 4 cups Bean Salad with Lemon-Cumin Dressing (see Associated Recipes)
  • ⅓ cup chopped fresh mint (reserved from bean salad recipe)

Instructions:

  1. For a single serving of lettuce wraps: Put 3 lettuce leaves in a small container with a lid. Add 2 tablespoons of quinoa and 1/3 cup of bean salad on each leaf. Sprinkle 1 1/2 teaspoons of mint on each. Keep in the refrigerator for up to 1 day.
