Meal-prep vegan lettuce wraps

  • ⅓ cup chopped fresh mint (reserved from bean salad recipe)

Instructions:

  1. To make a single serving of lettuce wraps: Put 3 lettuce leaves in a small container with a lid. Add 2 tablespoons of quinoa and 1/3 cup of bean salad on each leaf. Sprinkle 1 1/2 teaspoons of mint on each. Store in the refrigerator for up to 1 day.
