Mayonaissey potato salad

Delight in the creamy goodness of mayo with our potato salad recipe. A satisfying blend of flavors that will tantalize your taste buds.

Ingredients:

  • 8 - 10 medium sized red bliss or white potatoes
  • 1 cup good quality mayonaisse
  • 1 tablespoon olive oil
  • 2 tablespoons tarragon vinegar
  • 1 teaspoon Dijon mustard
  • salt to your liking
  • a pinch of sugar
  • 2 tablespoons finely chopped red onion or scallions
  • a few grinds of black pepper
  • garnish with curly or flat leaf parsley

Instructions:

  1. Place a large pot on the stove and bring water to a boil. Once boiling, add potatoes and a pinch of salt. Reduce the heat slightly and let the potatoes cook until they are tender, which usually takes around 20-25 minutes. Drain the potatoes and let them cool in a colander until they are cool enough to handle for peeling and cutting.
  2. Dice the cooked potatoes into one-inch cubes and place them in a bowl, seasoning each layer with salt. Adding salt is a crucial step as it enhances the potatoes' natural flavors. In a separate bowl, combine mayonnaise, oil, vinegar, mustard, and sugar until you have a creamy dressing. Gently fold the salted potatoes into the dressing, ensuring they are thoroughly coated.
  3. Stir in red onions and gently mix. Just before serving, sprinkle a bit of freshly ground pepper over the salad and garnish it with fresh parsley.
