Mayonaissey potato salad

Ingredients:
- 8 - 10 medium sized red bliss or white potatoes
- 1 cup good quality mayonaisse
- 1 tablespoon olive oil
- 2 tablespoons tarragon vinegar
- 1 teaspoon Dijon mustard
- salt to your liking
- a pinch of sugar
- 2 tablespoons finely chopped red onion or scallions
- a few grinds of black pepper
- garnish with curly or flat leaf parsley
Instructions:
- Place a large pot on the stove and bring water to a boil. Once boiling, add potatoes and a pinch of salt. Reduce the heat slightly and let the potatoes cook until they are tender, which usually takes around 20-25 minutes. Drain the potatoes and let them cool in a colander until they are cool enough to handle for peeling and cutting.
- Dice the cooked potatoes into one-inch cubes and place them in a bowl, seasoning each layer with salt. Adding salt is a crucial step as it enhances the potatoes' natural flavors. In a separate bowl, combine mayonnaise, oil, vinegar, mustard, and sugar until you have a creamy dressing. Gently fold the salted potatoes into the dressing, ensuring they are thoroughly coated.
- Stir in red onions and gently mix. Just before serving, sprinkle a bit of freshly ground pepper over the salad and garnish it with fresh parsley.
