Massaged kale salad in a minute
Delight in the crisp freshness of massaged kale salad, a quick and satisfying dish bursting with vibrant flavors in no time.
Ingredients:
- 1 bunch Kale
- 1/2 cup Blue Cheese
- 1 pinch Salt and pepper
- 1 small shallot minced
- 1/4 cup toasted walnut pieces
- 1/4 cup dried cranberries
Instructions:
- Clean, pat dry, remove stems, and thinly slice your kale leaves.
- Mix together cheese, vinegar, minced shallot, and olive oil in a bowl.
- Sprinkle with salt and pepper, and then add the cheese and olive oil. Gently mix until the kale is coated and tenderized to your preference.
- (You can also use lemon juice instead of vinegar, feta or goat cheese instead of blue cheese, raisins or chopped apples instead of cranberries, and pecans instead of walnuts - be creative!)
