Massaged kale salad

Ingredients:

  • 1/2 cup white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon Kosher salt
  • 140g cherries, halved and pitted
  • 1 small kohlrabi, skin peeled and julienned
  • 2 tablespoons olive oil
  • 1/2 teaspoon Kosher salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon honey
  • 1 large bunch laminate or Red Russian kale, stems removed and leaves roughly torn
  • 1/2 small red onion, slicked thin
  • 30g Parmesan cheese, sliced thin
  • Freshly ground black pepper

Instructions:

  2. Combine vinegar, sugar, and salt in a small bowl. Divide the cherries and kohlrabi into separate containers. Pour half of the vinegar mixture over the cherries and the remaining half over the kohlrabi, stirring well to coat them. Let it sit while you prepare the rest of the salad, approximately 10-15 minutes.

  4. Mix olive oil, salt, lemon juice, and honey in a small bowl. Drizzle the mixture over kale leaves and gently massage the kale by hand until it wilts and becomes tender, which takes about 5-6 minutes.
  5. Combine the massaged kale with red onion, pickled cherries, and kohlrabi. Sprinkle Parmesan cheese and freshly ground black pepper on top.
