Mason jar power salad with chickpeas & tuna

Enjoy the flavor explosion of a Mason jar power salad with protein-packed chickpeas and savory tuna. Quick, easy, and bursting with freshness!

Ingredients:

  • 3 cups bite-sized pieces chopped kale
  • 2 tablespoons honey-mustard vinaigrette (see associated recipe)
  • 1 2.5-ounce pouch tuna in water
  • ½ cup rinsed canned chickpeas
  • 1 carrot, peeled and shredded

Instructions:

  1. Mix kale with dressing in a bowl, then put them in a 1-quart mason jar. Add tuna, chickpeas, and carrot on top. Close the jar with the lid and store in the fridge for a maximum of 2 days.
  2. When ready to eat, pour out the contents of the jar into a bowl and mix well to incorporate the salad components with the kale that has been dressed.
