Marinated zucchini salad with parmesan and pepitas

Ingredients:

- 1/3 teaspoon kosher salt
- 1 heaping tablespoon lemon juice
- 1/4 cup pepitas

- freshly ground black pepper
- 1/4 cup chopped parsley (optional)
Instructions:
