Marinated pearl onion salad

Ingredients:

  • 450g pearl onions
  • 3 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • 2 tablespoons coarsely chopped flat-leaf parsley

Instructions:

  1. Start by heating a medium saucepan filled with water until it reaches a boiling point. Put the pearl onions into the boiling water and cook over medium to high heat until they become tender, which should take around 5 minutes. Once done, drain the onions and let them cool down under cold running water. Gently dry them using paper towels. Remove the root end and peel off the skins from each onion.
  2. Mix vinegar and olive oil in a medium bowl. Add the pearl onions, season with salt and pepper, and mix well. Allow it to sit at room temperature for 1 hour. Finally, add the parsley, give it a good mix, and it's ready to be served.
